I'm finally getting back to this, and am changing this issue from a support request to a feature request.
The devs I work with were able to change the default setting for "Show download button" to off, so that part has been resolved for me, but changing the default setting for "Show inline embed" for PDFs to off doesn't appear to be possible.
I was told by my devs that the option for an "off" default needs to be provided by the WordPress Gutenberg project first. See this WP issue: https://github.com/WordPress/gutenberg/issues/34825
MR !1 in #2 works for me.
Are there prospects for a patch anytime soon?

This seems to have been fixed in the new 2.8 release. Can anyone else confirm?
I'm closing this as "outdated" because the accordion module included with Gutenberg USWDS https://www.drupal.org/project/gutenberg_uswds β does what I need and works with Drupal 10.
In the meantime, here's a q&d patch if one has already added the contrib Seven theme.
Okay, I think I found the solution.
I patched the uswds.libraries.yml file on my site to use /modules/contrib/gutenberg_uswds/assets/js/uswds.min.js instead of the js that was placed in the uswds theme's assets folder, and that seems to have done the trick.
I'm changing this issue as "Closed (works as designed)", because in this case the theme does.

I encountered the same errors using 8.x-2.7, and switching to 8.x-2.x-dev resolved the problem for me.
I can confirm that this is an issue with the ABR admin UI after upgrading to 3.0.0.
When I edit a configuration, the "field of the bundle" in the form is blank. After I (re-)select the field and save the configuration, the configuration in the database is correct and the access works properly. If I edit the configuration again, "field of the bundle" is again empty in the form.

Should the instructions refer to "the modules page" when both the admin menu label and h1 heading for the page say "Extend"? I suggest making the instructions consistent with the wording of the UI.
I agree with @pearcraft: "Fields", "Media", and "Third-Party Integration" are good.

"The Scheduler module allows authors to schedule content to be published and/or unpublished automatically at a future date and time."
I like version 3.1; to me it best represents the "organize things" aspect of the module.
