Problem/Motivation

While checking #3352043-8: Rename $op operation in hook_node_grants[_alter]() and node_access_grants to $operation → I found that core has mentions of hook_node_access()

Proposed resolution

Replace it with hook_ENTITY_TYPE_access which is used since 9.x
