Update Composer dependencies for 10.5.0

Similar to 📌 Update Composer dependencies for 11.2.0 Active we should defer Coder and PHPStan to another issue I think.

Fixed some invalid YAML which fails on newer Symfony. The other issues were problems in HEAD, fixed in 🐛 HEAD broken on 10.5.x Active so hopefully this run is green.

Pipeline is green, LGTM

phpstan against 10.5.x made my computer very unhappy - maxed out CPUs + 64gb memory + swap etc. which I haven't seen happen since two computers ago. So had to give up and use --no-verify.
