Yes, unfortunately the situation in the mentioned extra_field module issue is very strange and not likely to be moved forward easily :(

Drupall 11 support has been added in the 3.x branch of extra_field.
composer require 'drupal/extra_field:3.0.x-dev@dev' - 🇩🇪Germany a.dmitriiev
There will be one more dependency to fix: https://www.drupal.org/project/extra_field_plus → . It requires at the moment extra_field 1.x or 2.x, so 3.x will not be accepted. So, we have to wait a bit more

Both have 3.x branches now.

I confirm extra_field now has a 3.x branch that supports D11, and that composer.json has been updated to point to that branch

Waiting for Extra Field Plus to release stable. Extra Field has done beta1 for 3.x.
