Upgrade to Commerce 3.0.x

+1, can this be merged please? It is blocking composer from installing commerce_stock in combination with commerce 3.0.

I was hoping to commit this as part of https://www.drupal.org/project/commerce_stock/issues/3428501 📌 Automated Drupal 11 compatibility fixes for commerce_stock Needs review however as I am still testing, I merged this commit and it is now available in the latest dev version.

Can we get a new release?
