Calling mb_check_encoding() without argument is deprecated

After upgrading the PHP version to 8.1 I have been getting:

Deprecated function: mb_check_encoding(): Calling mb_check_encoding() without argument is deprecated

Upgrade PHP version to 8.1 then will you be able to produce the error.

Check if the value is not null first.

Coalescing doesn't work fine as mb_check_encoding considers empty string as error too. So first patch works better: https://git.drupalcode.org/project/views_datasource/-/merge_requests/1/d...
