Allow for config of paragraph form modes

Problem/Motivation

Form modes allow for different content types to have different edit forms for users. Currently, the widget just hard codes "default" with no way to use additional modes.

Proposed resolution

Add a setting to the widget to allow for choosing of form modes.

This ended up fitting in with tests that I was writing for https://www.drupal.org/project/layout_paragraphs/issues/3440313 ✨ Allow View Mode Selection Inside Layout Paragraphs Widget Fixed , and I added this functionality into MR!167 on that ticket.
