need to be able to override the link text of embedded media files

I feel like https://www.drupal.org/project/drupal/issues/2994702 was a missed opportunity to do this.
Currently, when you embed a media file, you have no way to change the link text to anything else. Because the idea of Media is to offer reusable document, it cannot be forced upon users that the link will always have the same static link text.

Along those lines, we don't need to manage a caption when handling files so maybe replace the caption field in the Edit Media popup with the link text and if possible include it the information in the drupal-media tag

This coupled with the fact that media still can't embedded inline in CKEditor is really frustrating for developers who are working on document-heavy sites as opposed to mostly pictures.

I'd like to hear the community's thoughts about this.
