When adding a new field to a content type, a first-time user will likely explore his options in the "Field type" select. It will not be obvious that there will be more options when turning on additional modules. For that reason, we turn on options.module, number.module, etc. by default. Not the shiny, new datetime_range.module or telephone.module, though.
The same goes for the new Umami profile.
Enable datetime_range and telephone in standard.info.yml and demo_umami.info.yml

No technical change. The change is only for people using standard profile before they have figured out how and when to turn on modules.
