Add default_content to the main project composer.json

Problem/Motivation

In [#3510426#comment-16022782] we added default_content to the starshot_demo theme composer.json.
As that's not the main project composer.json, it's not being picked up for e.g. experience_builder tugboat config, so it fails to build the tugboat preview.

Steps to reproduce

See any experience_builder tugboat build log.

Proposed resolution

Add default_content to the main project composer.json

Remaining tasks

Create MR.
I don't think it requires a release, but it might. Didn't verify.
