Could you please provide detailed steps to reproduce the issue? Currently, I am unable to replicate it.
The key was not created on the page at /admin/config/system/keys, but there are no errors displayed on the page at /admin/config/ai/settings

This is already solved here and will be pushed in next release: https://www.drupal.org/project/ai/issues/3476940 🐛 Avoid crashing the AI settings page if the default provider is not fully configured Active
You can test with 1.0.x-dev and it will work.
