Add 5.3.x to the project issues

Problem/Motivation

The 5.3.x branch was created, however we are not able to set issues against it until the 5.3.x branch is configured in the project page. I do not have access to do this.

Steps to reproduce

Edit any wxt issue, try to set it to 5.3.x-dev , it's not in the dropdown list.

@joseph the 5.3.x branch is just for testing, and only on GitHub at this point. Once testing is complete, we will release the 5.3.x branch on Drupal.org. For the time being, let's collect feedback/issues on the related ticket - https://www.drupal.org/project/wxt/issues/3469267 →
