Error: Attempt to modify property "menu_config" on null in we_megamenu_entity_insert()

Problem/Motivation

When adding new menu item under a parent link the following error is logged and the site breaks with "The website encountered an unexpected error. Try again later."

Error: Attempt to modify property "menu_config" on null in we_megamenu_entity_insert() (line 716 of /app/web/modules/contrib/we_megamenu/we_megamenu.module).

Steps to reproduce

Navigate to /admin/structure/menu/manage/main
Add a link (this works)
Add a child link under the first link
