CSpell - enable and fix

When switching to GitLab CI, CSpell threw a few failures so the job is currently skipped in CI.

Steps to remedy:

  1. Remove the 'SKIP_CSPELL' variable from gitlab-ci.yml
  2. Fix the various errors

I recommend we commit 📌 Remove composer.json (not needed unless external dependencies are needed) RTBC before opening a branch for this as that issue will remove many of the CSpell errors by removing the docker-compose file.
