UTF8 encoding - support for all character sets

Thanks joseph.olstad. I'm not sure we've seen this but I'll try and reproduce. Contributions, of course, very welcome!

I'm about to try something, if it works I'll let you know, I'll be working on this the next few days.

I haven't solved it yet, getting ready to go on vacation.

Ok wow it took me way too long to figure this out. I ended up calling ChatGPT and ChatGPT spit out the answer after I explained in enough detail the situation. I basically explained that it was the \mikehaertl\wkhtmlto\Pdf class involved and ChatGPT spit out the fix.

I tested it, and it works.

@rattusrattus , please publish a new release with this fix for encoding! :)

The documentation says UTF-8. however "utf-8" works also.
