AFAIK we currently can't access fields added to views. It would be great to make this possible, since there are where this can be very useful.
Here is my current use case: I have a view that queries a search api index. Search API provides a views field that outputs exceprts of search results. This is generated dynamically and can only be accessed by using the views field, and isn't available on the rows. Another example would be the search result relevance field.

This is tricky because the GraphQL-schema for these calculated fields is difficult to determine.
