Require new version of mailchimp-api-php

Problem/Motivation

Several issues that were holding back advanced users (119, 122, 124) got fixed in version 3.0.1 of mailchimp-api-php. Mailchimp module 2.2.2's composer.json explicitly requires mailchimp-api-php v3.0.0; we should change that to include the latest 3.x, so that module users can choose to benefit from the latest mailchimp-api-php improvements with just a composer update thinkshout/mailchimp-api-php if they need to.

Proposed resolution

Tweak composer.json to call for ^3 instead of 3.0.0.
