And I now realize this is fixed in 5.4.x+ :-/
Nm, sorry for the noise.
Using a core patch to add token support to Views table captions doesn't work with Views Bootstrap because the caption form element is defined a second time.
E.g. https://www.drupal.org/node/3406598 →
Don't bother redefining the caption option.
The caption option appears in a slightly different location.
