Remove Bartik dependency in composer.json & submodules

Problem/Motivation

Bartik shows up in several places in the 2.1.0 version of the module. With Drupal 9 no longer supported, I think the module should remove this dependency.

    Hi, I have removed the Bartik dependency in composer.json & submodules. And replaced with Olivero as it is the default theme for the drupal 9 and above.

    Please review and verify.

    @chetan11, wow, thank you for jumping on this. However, I was hoping this would be applied to the 2.1.x branch rather than the 8.x-1.x branch.
