Can you (or any other user who has this issue) please provide screenshots of the set up and which library version is used? Possible reasons for this issue could be: this feature is not part of the library version you use, the respective option is not activated in Views or that something in the module or your setup holds it back to occure. Also the JS console output of your browser would be interesting to take a look at.

Additional hint: I think show/hide columns for a Views table on a Drupal basis is rather like show/hide fields in Views and I personally like when Drupal has a more generic approach on top of the options individual features or modules/themes bring with. For example: I like the back-to-top module over theme implementations of it because I can use it no matter which theme I activate. Having all things in one tools is not always preferrable. In this case here I can recommend to have a look at: https://www.drupal.org/project/views_fields_on_off → which maybe can solve your needs? If not, let us know.
I am also interested in opinions since it seems this feature isn't visible yet indeed. Do we have dropped it or is it blocked by something we need to fix?

Oh you think that was what he was referring to? But this causes only vertical collapsible rows. I thought he was after the show/hide column dynamic ajax feature like here: https://datatables.net/examples/api/show_hide.html

Either exists and some thing wrong happens, either not exists and it is a request for a new feature.
