Stop manually removing config of keycloak on uninstall

Problem/Motivation

In #2899185: Use config entities for clients → , openid_connect started using config entities instead of "plain" config.
Since config entities can have dependencies, it no longer makes sense to have an hook_uninstall to delete the keycloak config manually.
