Bump focal point to stable

Focal point has a stable release with some more bug fixes since the alpha. There is no reason to lock this to the alpha release anymore.

Update composer requirements.

@BramDriesen even ACMS Image required focal point "^2.0@alpha" it will download the latest release i.e. "2.0.0".
