EckEntityRouteProvider does not use link templates

Problem/Motivation

EckEntityRouteProvider does not use the link templates as defined in eck_entity_type_build. Apart from having those link templates duplicated across files, it's not possible to unset them in custom code to eg. disable the canonical route.

Proposed resolution

Refactor EckEntityRouteProvider to use the link templates from $entity_type, just like DefaultHtmlRouteProvider does.
