Update versioning of required modules in composer.json

Problem/Motivation

Right now gdpr composer.json doesn't have a latest release of the contributed modules.

 "require": {
        "drupal/checklistapi": "~2.0",
        "drupal/entity": "^1.0",
        "drupal/entity_reference_revisions": "^1.8",
        "drupal/message": "^1.0",
        "drupal/token": "^1.7"
    },

Proposed resolution

Update all required modules in the composer.json as per their respective current stable version.
