Media Document Template overrides ANY view mode, perhaps we should better override specific

Problem/Motivation

modules/drowl_media_types/templates/media--drowl-media-types--document.html.twig currently overrides ANY view mode (existing / known or new) with our custom button implementation. That's not typical for us.

I think it would be better to ONLY override defined view modes this way, even if it's default, but not custom view modes. Otherwise at least me and other team members will wonder, why changes in the view display are not reflected in the view mode.

Turning this around shouldn't have any negative effect.
