I would propose to wrap the call to FieldStorageDefinitionInterface::getCardinality in the Entity Browser Entity Reference widget in its own method within the widget. This would allow to override functionality based on field cardinality in the widget more easily.
Basically I am planning to integrate Field config cardinality → with the Entity Browser and this would be a lot of easier this way.

Totally agree.
Field config cardinality is so great but integration with entity browser is a bit complicated without the feature.
I just improve the patch a bit : We want field cardinality, so method should be a fetch, not a get ;)
@arnaud-brugnon this doesn't work for me. The patch in #4 did work tho.
