I had the same question. For anyone coming here looking for the answer, it has something to do with getting Paragraphs in autocomplete form fields. This help text appears in the interface:
"Select the field(s) that will be searched when using the autocomplete widget."

TLDR: This is not for general site-building purposes, it's a backend tool.

It is not clear to me: it is not an equivalent to "edit fields/settings/" "view used to select the entities"?
