[Meta] Roadmap for a stable release with security coverage

A quick update: in 📌 Investigate search_api_opensearch as base for elasticsearch_connector Fixed , we made a bunch of changes to how the 8.0.x branch of the module works, and we got automated testing and linting running in GitLab CI: https://git.drupalcode.org/project/elasticsearch_connector/-/pipelines

Also worth noting that 🌱 Plan for 8.0.0-alpha release Active exists

First 8.0.0-alpha is now released! Any help with testing and making the upgrade process smooth is greatly appreciated.
