Thanks. Commenting the hidden:true line in the .info.yml files did the trick.

Initailly, Classy shows up with an uninstall link in the Appearance page, but Stable does not have this link. After unisnstalling Classy, the uninstall link in Stable shows up. However, uninstalling these themes does not remove the directories from core/themes.
