alforddm → created an issue.

For anyone else who finds this.   I was just being stupid.  

You have to have the fields hidden fields above the field where you're rewritten the output.    Makes total sense given the way views outputs the fields.    Can't believe I missed that.  

I just wanted to say think you as well for linking this as well.   Solved it for me on Drupal 9.5.7
