[5.0.0-alpha5] Implement new "enabled" key provided by UI Skins

Problem/Motivation

UI Skins allow to override the definition of themes, and now it's possible in a subtheme to disable themes declared in the parent theme.

Remaining tasks

Implement that logic in the starterkit to only keep available , light and dark themes.
