Temporary switch tests to Drupal 11.1.x core until PHPUnit 11 support is implemented

Drupal 11.2.x switched to PHPUnit 11.x, which is not compatible with the current unit tests.

To workaround this, temporarily switch the CI job to use Drupal 11.1.x branch.

We will revert back to the latest Drupal Core when ✨ Add support for Drupal 11.2.x and PHPUnit 11.x Active is fixed.
