Pin version 1.0.0 to AI 1.0.x

Problem/Motivation

We have a breaking change happening in AI 1.1.x and want to force anyone updating the AI module to update the Pinecone provider as well.

Setting it to "drupal/ai^1.0 <1.1" on a 1.0.0 release and "drupal/ai^>=1.1.0" for Pinecone provider 1.1.0 release should make sure that this happens.
