Rename and re-document tests to no longer mention 'Update Manager'

Problem/Motivation

Split from 📌 Rename update module back to Update Status Active . The MR in the parent issue did not try to cleanup references to 'Update Manager' from any tests under core/modules/update/tests/*. There are a bunch of references to 'manager' in those files. However, it's not user-facing, and therefore, not urgent for the 11.2.0 release, so moving this to a lower-priority follow-up.

Pretty straight forward, applied the MR searched for "Update Manager" in the tests folder and all seem to be addressed.
