A project we're using requires us to strip citations from field values before indexing them, because they clutter the search results. I thought I'd open a merge request with our implementation in case you want to add this to the main module.
A Search API processor that strips all citations. The wrapper class element is made configurable in case the rendering of citations is customised. The current implementation will not break anything in case the Search API module is not installed.

Thanks for the contribution! I think maybe require-dev needs to have search_api as a dependency to avoid e.g. the phpstan errors?
