Upgrade mongodb to 2.0

There's new release https://github.com/mongodb/mongo-php-driver/releases/tag/2.0.0 with some backward incompatible changes so contrib module and core work needs a way to adopt it

Check deprecations at release page 3457540

- upgrade PHP 8.4/8.5 images first to give a time to adopt
- upgrade 8.3 later
