chore: Fix pipeline to follow changes in the new GitLab Templates releases

The new GitLab Templates release reworked the previous major nightwatch block, so our pipeline started to fail with an error:

 Unable to create pipeline
    !reference [".nightwatch-base", "variables", "DRUPAL_TEST_WEBDRIVER_HOSTNAME"] could not be found

Get rid of our overwrites because now we can use the version from upstream directly.
