Use the new logo in documentation

Problem/Motivation

Once the new logo is done, documentation will need to be updated to use it.

Proposed resolution

Replace the logo in documentation.

Remaining tasks

• Update the logo in the mkdocs configuration.
• Check all other documentation for usages and update if necessary.

User interface changes

• New logo in documentation!
