GitLabCI: Broaden tests coverage

Problem/Motivation

Latest pipeline on 2.2.x is running only for STABLE_CURRENT, NEXT_MINOR and NEXT_MAJOR:
https://git.drupalcode.org/project/image_link_formatter/-/pipelines/208125
This build tested on Core: 10.3.0, 10.4.x-dev and 11.x-dev

But tests are not executed for MAX_PHP, PREVIOUS_MINOR or PREVIOUS_MAJOR.

Steps to reproduce

Run build pipeline on 2.2.x at:
https://git.drupalcode.org/project/image_link_formatter/-/pipelines

Proposed resolution

Uncomment the settings in the GitLab CI config file:
https://git.drupalcode.org/project/image_link_formatter/-/blob/2.2.x/.gi...

run tests again and fix any error or warning.

Quick follow-up on this issue:

Created merge request MR!6 above at #2 and merged the changes at #3.

Latest build on 2.2.x is now testing all supported core versions and max PHP 🟢
Opting in all possible test jobs:
