Theme definition: link to utility classes

Problem/Motivation

In ✨ Support for UI Skins theme setting Active we found that it would be good for a theme to declare a mapping to CSS classes utility to let theme adapt behavior depending on the desired theme.

Need to:
- add some keys into the theme declaration.
- add service/utility to ease the detection of the mapping
