Allow more flexible identifiers for LRS entries

Problem/Motivation

lrs_xapi currently hard-codes entity id and user id in the schema https://git.drupalcode.org/project/lms_xapi/-/blob/1.0.x/lms_xapi.instal...

Discussed this with @graber and we think we could just use a string identifier instead, this would give us more flexibility to e.g. use the course status ID if we want to.

Remove the entity ID and user ID columns and replace with a varchar.

The schema change and making this flexible seems good though.
