Creating templates from Drupal bundles is currently supported and works, but it's limited. Supported field types seem to be file, image, text, text_long, text_with_summary, string, string_long, email, telephone, date, datetime. Some of those result in just text fields though.
Taxonomy terms are also supported, but in the current version they don't seem to work (addressed in the merge request).
Paragraphs seem to be supported, but they just produce normal fields, not cwb components.
Media doesn't seem to be supported.

I did also try to improve the paragraphs integration. The serialization process being used makes it difficult to understand, what type of structure the library expects.
As per discussions, this is out of scope. Will create a new issue to disable the functionality.
