Missing Drupal user id from token content

Problem/Motivation

We use the Drupal user id from the token content to validate the user. The user id is now missing after upgrading "drupal/simple_oauth" from 6.0.0-beta6 to 6.0.0-beta7 and "lcobucci/jwt" from 4.3 to 5.3.

Steps to reproduce

Upgrade to "drupal/simple_oauth" version 6.0.0-beta7.
