Module is overriding every theme defined ckeditor5 stylesheet

Problem/Motivation

The way the module is implementing the library_info_alter hook is overriding every theme defined value in the ckeditor5-stylesheets array. We should append to the array instead of overriding.

Steps to reproduce

Have a theme enable with ckeditor5-stylesheets
Observe none of them being applied
