@tunaman I encountered the same issue using D11.1.1 and Workbench Email 3.0.5.
My email notifications were set to Plain Text format. After changing the Format and Body fields to HTML format, the issue was resolved.
I have a token in the email subject (node title). The actual node title has an apostrophe in it e.g. "can't". This results in can't in the email that is sent.
Using D10.2 and test with Workbench Email 3.03 and 3.x-dev
