Hi DrupalDope, EPT Image has usual Link field:
and you can install Link Attributes module:
https://www.drupal.org/project/link_attributes →Then 'target' attribute will be available in EPT Image template:
It's possible to add Link Attributes module as a dependency for EPT Image module, but it can be too much to install Link Attributes module for small EPT Image. It's also possible to use additional field "Attibutes" in EPT Image paragraph and update template to use it, but then it will do the same as Link Attributes module does.
I don't know how many developers use EPT Image module and how they often use image with link and target="_blank". For now I think it will be better for your site to use common way to add attribute using Link Attributes module and override EPT Image template.
Feel free to open this ticket if you have any ideas.

OK, I think I know the best way we can do here. I will update template for EPT Image implying that site already uses Link Attributes. Then it will not require Link Attributes module, but it will work with it if it has been installed.

I updated template in new EPT/EBT Image modules, so you will need to update EPT Image module and apply Link Attributes field widget for Link field:
Then attributes will be applied on frontpage automatically:
