I like this idea, it would help clean up the model making it easier to set up and understand.
I would like it to be smart, where you can select a content type and it provides the available fields to fill in.

That's ambitious. Certainly doable, but that needs some extra logic in the frontend, nothing for the backend, I guess. If you wanted to give this a try over at the bpmn_io project, I'd be happy to test and review.
