The text value and format of fields that have been overwritten in the context in which they are used thanks to the power of https://www.drupal.org/project/media_library_media_modify → are not stored in any normal field or field revision field on media, but instead serialized in an "overwritten_property_map" field within the referencing entity (e.g. node or paragraph).
