Is there an existing method or mechanism within Views extension that helps the retrieval of labels for query fields during the execute?
I aim to create a table where the header displays the human-readable names of the fields.

At the moment, you can only query the entities based on the result of the row. But patches are welcome if you want to add this functionality.
