Any additional features should be handled via custom code or dedicated contributed module.
The webform Term Select element allows you to reference a taxonomy vocabulary and in the config form you can limit the hierarchical depth. Currently you can only limit the depth in one direction i.e.
1: top level only
2: top 2 levels only.
I would like to be able to go backwards i.e.
-1: deepest level only
-2: deepest 2 levels only
Closed: won't fix
